The word golloria is not a common one in the Spanish language. However, the Real Academia Española dictionary, the most prestigious one in the Spanish-speaking world, relates it to the very similar word golleria, which means exquisite dish. This definition fits perfectly with our Panamanian golloria
Golloria is made of two main ingredients: green plantain and sugarcane honey. The procedure to prepare it is very simple, yet the results are delicious. The first step is to peel the plantains and cut them in small pieces. At the same time, a pot is filled with sugarcane honey and then place on top of the fire.
While the honey is heated, the plantains are deep fried for several minutes. Then they are cleaned of any excess oil and mixed together with the honey, once the latter reaches the boiling point. This mix is steerd for a few minutes and the it is left to cool. After that, our golloria is ready.
Traditionally, golloria is enjoyed as a dessert, but due the fact that it includes plantain and sugarcane honey, it has a significan amount of nutrients. We encourage you to try this simple, yet delicious, dish of the Panamanian cuisine.
